Need these for using products that connect to, or hang from studs -- TV mounting plates, kids swings, heavier flower boxes, etc. Use stainless for weather-exposed applications and/or potential moisture. Use carbon steel for heavy capacity requirements in dry conditions.

Using these to hold up a barn door assembly, good quality fasteners for a decent price. I didn’t need stainless but if used outside they won’t rust.
