I use them for making breakfast quiche. They’re a little too deep, so I doubled the recipe and it makes a super hardy quiche.

These tart pans with the removable bottom are the perfect size and look absolutely fantastic. They worked well the 1st time or 2 that I used them... I also only hand wash them very gently with the mildest of dish soap. No scrubbing brushes just a very simple cotton cloth.I most recently made a tart and a pie in those pants and in both cases when removing the bottom out out immediately caused flaking in the food product. That's a huge problem because any non stick surface contains chemicals which last practically forever. When something is flaking that is nonsense it is the last thing you want in your food because those chemicals are gonna enter your body.I removed the 5 star rating and reduced it to one star though I wouldn't make it even less if I could. Something like this should be engineered to last for a few years not a few months. Definitely not a recommended product.

The quality of this tart / quiche pan is average. The reason for the 3-Star is the removeable bottom of both pans aren't completely circular, and because of this, they don't completely cover the opening in the tart pan. I don't know if it's poor quality control at the plant, or the manufacturer trying to save a miniscule amount of product costs, but it would really be nice if there was another 1/8" - 1/4" of metal on the bottom removeable disk to ensure the hole in the pan was completely covered. Maybe I just received a bad batch, and for how much I'll use these, I'll keep them.

I don't like the fact that the bottom insert is so small. It slips and slides inside and makes it tricky to handle. I wish it fitted snugly against the sides.

These are the tart tins that Alton Brown recommends in Good Eats for baking pies. Releasing the pie from the tin is a simple matter of freeing the edges then pushing the base down onto an inverted bowl — the rim falls away and it is then a simple matter to free the base. I’ve used the other member of this set of two a couple of times and it works well. They seem well made, with a smooth anodized coating.

I like these high sided tart pans. I used one for baking and another to make a quiche. I always use non-stock spray in any pan that I use; this ensures non-stick results and makes clean up easy as well. I really appreciate that the removable bottom fits well to the edge. I recommend these!
