I got these to evaporate maple sap. They’re lighter weight than restaurant kitchen quality. But that’s nice when picking them up full. Really conduct heat well. Didn’t warp after hours over high flame. They fit over a single burner on my restaurant gas range.

Thin steel, steam table pans that have holes after 2 months use. I have used these kind of pans for over 40 years I'm my restaurant and have never had a pan burn through in such a short time. They are not on direct heat only in 175 degree steam table.
