Bought this griddle to replace a highly rated Green Pan (ceramic coated). Stay away from ceramic coated pans. Pancakes stick and make a mess when trying to flip and the remnants burn on to the pan and you can't get the burn marks off no matter how hard you scrub with a non stick suitable pad.Just got this Calphalon griddle pan and had to immediately try it out. I just wiped a little canola oil into the pan surface and what a joy. This is good non stick. Easy to flip pancakes without any mess. No problems and it cleaned up nicely with just Dawn and a sponge. Measured its thickness with a micrometer and its exactly the same as the Green Pan . Can't tell you how long the non stick surface will last but we are off to a good start. The ceramic coated Green Pan was a problem from the start and after just a few uses I can't stand it and the mess it causes. It will go in the trash. Don't understand how it ever got good reviews. Happy to find a replacement that is truly non -stick but it is PTFE (Teflon) coated but I don't care. It's safe if you don't heat it over 450 deg. F. I hope it lasts a few years. My previous teflon coated Griddle lasted for years without problems.

I purchased an earlier version of this Calphalon 11-inch Square Griddle Pan about a decade ago, and it has been a solid addition to my kitchen. The hard-anodized aluminum construction has held up beautifully over the years, with no warping or uneven heating. I use it mainly for pancakes, grilled sandwiches, and quesadillas, and it delivers consistent results every time.The nonstick coating has been impressive overall, although it has slightly worn down with heavy use and regular cleaning (I’ve always hand-washed it to preserve the coating). It’s still functional, but food does stick occasionally if I’m not careful with the heat or don’t use enough oil.The pan's lightweight design and comfortable handle make it easy to maneuver, even for longer cooking sessions. The flat surface provides ample room for multiple items at once, which is perfect for family breakfasts.The only downside is that the nonstick coating isn't as durable as I’d hoped after all these years, but considering the daily wear and tear, it’s held up better than most other pans I’ve owned. If the newer versions have improved the nonstick layer, I’d definitely consider upgrading.Overall, a reliable and versatile pan that has served me well for over a decade!

We must have purchased this griddle over 20 years ago (maybe 30) and every time my husband made pancakes he used it. It was getting very old and started sticking. I tried to buy something to replace it he hated every other griddle I purchased. He insisted that until we found something comparable, he would not give it up. Finally I looked at the bottom of the griddle and found it the name Calphalon and researched to find it they still made them. Hooray, they did and while the pan was expensive, it surely was worth it and now I have a happy husband. We threw away the old griddle and three others. Then I purchased two more Calphalon and love them -- just hope they last and are the same quality as the griddle -- Great product.

This pan is really thin. Like about 1/8" thin. On my first use I heated it up slowing at a low temp, then went to a higher temp for a while, and then higher yet for a while. I did the reverse when letting it cool, slowly lowering the temp after letting it sit at that level for a while. This whole process took over half an hour. I did this thinking it "might" season the pan somewhat. Well, it warped quite a bit. I have a flat top electric range, and the pan literally rocks on the range top. Honestly though, the pan is so thin it easy enough to bend back with a two hands so that the pan sits flat on my range top. But you really shouldn't have to do that. This pan is "one cheap frying pan". On the other hand, I haven't had anything stick to the surface in about 3 times being use. I certainly wouldn't buy again.

I like square grills. Unfortunately I've had to buy them about every year as they warp and lose their stickiness, even shortly after buying them. Well, this griddle is in a professional class. It's easily twice to three times as heavy and dense as your typical grocery store or big box store griddles. It's obviously designed for commercial professional use.First thing I noticed is how powerful the pan is for cooking. Due to its heaviness and density, it performs much like a griddle in a restauraunt. Even heat and totally flat cooking surface. When you put down four eggs they stay exactly in place, instead of sliding towards a slope.Very easy cleanup and a beautiful piece of equipment. Wish I bought this years ago, and plan on buying another one. Hightly recommended
