When one dry ages beef, there grows a layer of ROT around the beef. Before cutting into steaks, one must cut off said layer 'o rot. I use this for that.

Product works well and the extra blades are quite a bonus. Perfect for shaving "silver skin" from briskets.

Blades are too dull to be effective. Very disappointed in this product. I ordered this primarily because of its claim to be effective in removal of silver skin. It's NO better than a standard table knife. I would be returning it but it past its return date. Don't bother!

It looks good until you try to cut a brisket cap with it. It is not sharp enough to cut the fat cap. Clogged u easily and didn't work as advertised

I love how easy this product makes trimming fat off briskets. Smooth strokes takes off chunks of fat! And it has a blade to take the membrane off ribs. Pretty cool item.
