Having only made about 20 souffles in my life, I'm not sure I have the credentials to review a souffle dish. Nevertheless, I feel compelled to review this one so as to offset the average 1-star rating generated by the only previous reviewer to date. This is a great souffle dish. Its elegant simplicity complements the appearance of the souffle itself. The thin porcelain gives an excellent evenly cooked result, and the straight sides allow the souffle to rise perfectly. The only problem with this product - and the previous reviewer is sort of right here - is that it is difficult to determine the true volume of the dishes in the entire product line, and they probably ARE smaller than advertised. But I don't think there was ever any intention of claiming that this dish is 6-1/2" deep (as the previous reviewer believed). The marketer is saying that it is a "deep classic" design (to be contrasted with the "shallow classic" design, which Amazon also sells). The 6-1/2" figure applies to the diameter, not to the depth. So for your reference, here are the measurements I get: "6-cup deep classic": outer diameter (OD) 6-1/4" x 3.5" tall. Inner diameter (ID) 14.25 cm x 7.5 cm tall. Calculated volume 1.2L. Useful volume (the point to which I would fill a souffle dish) ~1L. "8-cup deep classic": OD 7-1/4" x 3-7/8", ID 17 cm x 8.5 cm. Calculated volume 1.9L. Useful volume 1.5L. (I'm mixing Imperial and metric here because I have a deep suspicion that the inner dimensions were designed for the metric kitchen, but I want you to be able to compare my measurements to the advertised outer dimensions, which are given on the Amazon site in Imperial units). Note that you have to take my "useful" volumes with a grain of salt, because they depend on my own ideas of how high one should fill a souffle dish and, as I said, my credentials are suspect. Also, please note that I measure inner depth only to the point where the dish starts to flare out. The actual dish rises a bit higher, but it would be absolutely wrong to fill it beyond the flare point. Anyway, I would rate this a 5-star product for itself, but I agree with the 1-star reviewer that the manufacturer could provide more useful (and accurate?) dimensional information.

The website description in the caption is "6 cup, 6 1/2 inches deep." It is only 3 1/4 inches deep, but 6 1/2 inches wide, and holds only 4 cups, not 6 (I measured). The follow-up paragraph in the website gives the correct measurements in inches, but still incorrectly states 6 cups. I returned this item once, explaining all this (the box is mislabeled, maybe directly from the manufacturer). They sent me the same item all over again, and I have to return it again.

The dimensions and capacity of this dish are not as stated. It measures 61/4" in diameter, outside edge to outside edge, and 31/2" high. It barely holds 4 cups. The quality of the porcelain is much heavier than the old Pillivuyt dishes. Overall I am disappointed but have given up seeking a replacement for my old 4-cup dish that was 61/2-7" in diameter and about 3" high. None of the several dishes I have tried arrive with dimensions as advertised. Since this holds 4 cups I will have to make do.

There are other porcelain manufacturers but I like Pillivuyt and have been adding to my collection for years.… soufflé dishes, bowls and breakfast cups, dinner plates… I am really a fan and food looks fabulous on white. These small soufflés are versatile and I use them constantly- they work well as a scuffle and are great as a small serving dish.

For Thanksgiving I had a request for Spinach Souffle. I got the Barefoot Contessa's recipe, but did not have a souffle dish.I cook a lot but had never made a souffle! This souffle dish worked perfectly with this recipe and I was delighted! I am happy to add this dish to my kitchen.
