What I needed was a 10 inch pan as I have a wonderful 11 inch pan. This is not 10 inch. It is exactly the same size as the one I already have-11 inches.Update: Sadly this pan sticks badly. Yes, I used medium heat & a little oil. It was however easy to clean after a quick soak but I am greatly disappointed.

The very first time I used it I did not care for the proper way to prepare a coating so naturally the diced potatoes stuck to the pan. So I learned how to clean thoroughly a stainless steel pan. I then learned how to do it proper and it's great since then. Very easy to clean. Since basically even if there's from time to time Here's what I do : I put the empty pan on medium heat and wait perhaps 3 minutes at most to attain the proper temperature to apply an oil coating. To check the temperature I use a dropper with water an drop from time to time a drop of water. When the drop of water doe snot evaporate anymore and bounces here and there in the pan, the temperature is right. I lower the heating to about 3 or 4 depending on what will be cooked then I pour about the size of a quarter (maximum) of sunflower oil in the pan and brush it around the flat surface and the sides with a silicone brush. Then I wipe any excess using a paper towel and the pan got its coating. At that point there's no need to add any il for instance to cook an egg. Which means that any added oil will be there specifically for effect, because the food being cooked requires additional oil. Not to prevent it from sticking.Reheating food, like rice (not making fried rice, just reheating) is a bit different and the main point is to use a lower temp than with regular pans, and tiny bit of oil, and reheat while covered.To really wash the pan (eg. the first time I used it) I used hot water and baking soda, letting it soak a bit. The maker recommends using javel water. Maybe next time, if ever there's a need to really scrub stuck food, I'll try javel water. Otherwise many people are using baking soda with stainless steel pan, so that's what I used and it works great.All in all a great pan, very well made, sturdy. This one will not see its handle becoming loose through the years.

La primera y única vez que lo utilice cocine a fuego lento e hice la prueba de la gota de agua, para que el calor se distribuyera a todo el sartén y tuviera la temperatura adecuada, y después agregue aceite de canola para preparar mi omelette, pero el aceite se empezó a quemar y se pego horrible sobre la superficie, dejando una mancha café que desde entonces no he podido quitar de mi sartén, ya probé con vinagre y agua, con jabón, y no se quita.

Not my first Ozeri pan so I knew what I was paying for. Sturdy, cooks evenly and and does everything you'd need a stainless steel pan to do. 10" is a great size as well, versatile.
