I like these for SS. Weld it up. Knock the weld down flush with a 40-60gr flap wheel, then take out scratches with these before putting a grain on it. I think they last longer and work better with a variable speed grinder, but they'll work fine with a normal grinder too.

I've used 3M surface conditioning discs for years at work so I'm familiar with the grits. These seem more towards coarse. That said, they remove rust well and are holding up very well.
