About this item

  • Made of natural wood

  • 100% made in Italy
  • Authentic Italian pasta artisanal item

Eppicotispai Chitarra (pronounced key-tahr-rah) is a pasta maker believed to have been invented in Chieti, Abruzzo region in central Italy around the 1800's.Meaning 'guitar,' a chitarra looks like a double-sided harp, with strings set close on one side, farther on the other. In then center of the device is a slanted board, designed to allow the cut pasta to slide off easily once it's been cut by the strings. Simply use a rolling pin, flattening and pressing the dough through the wires.

I got this for Christmas and it's a fantastic tool. It was the perfect gift, as I'd been thinking about getting one but was too cheap to splurge on myself! I'm really impressed with this unit. It's very sturdy, made out of good hardwoods, and cleverly built so that when you're not using it it's easy to relax the tension on the wires, then retighten them for use in seconds. It makes perfect pasta, uniform spaghetti and saves a lot of cutting work. What surprised me was how easy it was to clean up. If your dough isn't too wet all you have to do is wipe off the wires and tap the unit on the counter, the little bit of dust and dough falls right out. So much easier than a pasta machine. If you like to eat pasta, and your partner likes to cook, get them one immediately!

I've used this parts maker a few times now, and over all, it works fine. But a few of the middle strings won't tighten tight enough so when I try to roll out the dough over the strings, that one area has trouble cutting though the dough. That's frustrating because I have to stop and try to get that area to release the strings of pasta. I've tried tightening it and it still does it. Other than the string issue, it seems to be made well and sturdy. Easy to clean.

The wires are haphazard and thin gauge, not like the one I used during the cooking class I took in Sicily. That one produced consistent widths of pasta. I don’t see how this one can do that. I plan to return.

The product is just as advertised. Please note despite certain people’s complaints of it not being level etc. tension of the strings can warp it but it doesn’t effect the way it works. It makes the perfect sized pasta to me for spaghetti/chittara. When it arrived I needed to tighten the strings with the two tension screws. Once tightened it worked like a charm.

We enjoyed making noodles in Tuscany using this device. We highly recommend this one from Italy.

The item seems well made and is better than the photo description in that it is two sided with one side having wider strings than the other. The quality of the wood is good and the finish was much better than anticipated. All in all for twenty odd pounds packaged and delivered with a rolling pin it is really good value. The strings sound musical too. When I was looking at these there was a site which described how to make one. At this price it seems a lot simpler and probably cheaper just to buy it. I have not used it yet so cannot describe it in operation; but seeing & holding it I am confident it will work just fine.

A chitarra é bonita, bem acabada e funciona direitinho.

Superbe guitare, vraiment simple d'utilisation.
