Since its debut in 2011, the Porthole has gained significant attention, even finding a permanent space in the MoMa Design Store. Originally created as a custom piece for the bar chefs at The Aviary in Chicago, IL, it has been featured in dozens of magazines and blogs, including the cover of Food Arts magazine.

Early versions of the Porthole were hand-crafted in a small batch at Crucial Detail but, due to enthusiastic response to the piece, was adapted for higher volume manufacturing and launched as a Kickstarter campaign in August of 2012. Following an overwhelmingly successful campaign, the Porthole went on to win the Global Innovation Award for Best Product Design.

Garden Party Limonada

INSIDRE THE PORTHOLE

  • 175 g frozen blueberries
  • 40 g sugar
  • Zest of 1 lemon
  • 1 medium sprig mint
  • 2 celery tops

LIQUID TO BE ADDED

  • 3 oz squeezed lemon juice, strained
  • 4 oz Vodka

Assemble the Porthole, checking the seal for good contact on both sides. Pour Vodka into the assembled Porthole through the spout until almost full. Allow infusion to settle before inserting a stopper. Insert stopper and agitate until sugar is dispersed. When not in use, insert stopper and refrigerate to preserve freshness. Best if infused 2 hours to 2 weeks, periodically toggling the Porthole. Enjoy with sparkling water.

Winter Spice Bourbon

INSIDE THE PORTHOLE

  • ½ Pear, thinly sliced
  • 2 Mexican Vanilla Beans, cut in half and sliced open
  • 2 Cloves
  • ¾ cup Dates, cut in half

LIQUID TO BE ADDED

  • 10-11 oz Bourbon

Arrange non-liquid ingredients in the Porthole cavity. Close the Porthole and check for a good seal. Fill the Porthole with Bourbon. Infuse for an hour or more.

Cucumber Cooler

INSIDE THE PORTHOLE

  • 130g Cucumbers (approximately 2 mini cucumbers), washed and sliced into round or oval slices, approximately 3mm (1/8") thick
  • 2-3 Sprigs Mint, leaves washed

LIQUID TO BE ADDED

  • 50g Lime Juice (approximately 1 lime, 1 3/4 fl oz), freshly squeezed
  • 15ml (1/2 fl oz) Simple Syrup or 7.5g sugar, shaken with lime juice
  • 250g (8 1/2 fl oz) Gin

Arrange infusion ingredients in the Porthole. Close the Porthole, tighten screws, and check the seal for good contact on both sides. Shake liquid ingredients together. Transfer liquid mixture into the assembled Porthole through the spout. Best when infused at least 1 and maximum of 4 hours. A well-sealed Porthole can be refrigerated. Try mixing infusion over ice with chilled sparkling or tonic water. Experiment!

This little glass device absolutely stepped up my bar game.Not only is it great for infusing with fruits, spices, and more, but it’s a stunning show piece for entertaining. Seasonal infusions make for lovely dinner or cocktail party displays that guests can drink.In addition to being beautiful and functional, the porthole is easy to clean and store. It even looks nice empty, displayed on a bar cart!

I was first introduced to the Porthole at the Aviary, Grant Achatz's (of Alinea) Chicago cocktail bar. The Porthole was commissioned by the bar and built by Crucial Detail, which provides many other of the Alinea Group's serving/presentation items.Some of the reviews on Amazon had me worried that the Porthole was hard to assemble and/or had a problem with leaking. During the first month or so of use, I've experienced none of these problems. The item comes with all the tools and instructions that should allow you to have easy use like me.I will admit that getting the rubber gasket in place can be a little tricky at first. I spent about 3-5 minutes fighting with it the first time that I assembled the unit. After learning by error, I have been able to get it right ever since. It helps if you have a little bit of length on your fingernails to find the groove.As for recipes, there is a book included with the Porthole. The Aviary Cocktail book has also recently been published and this will provide some inspiration as well.If there is one complaint I have, it's the size of the unit. Depending on how stuffed your recipe is, this will really only yield enough for a cocktail or two (unless your adding additional items to the yield). Oh well, fun and beautifully designed.

I was going nuts trying to put the screws that come in a box IN the holes which didnt fit. Then I realized the black box contains replacement screws, the extra screens and the wheel. You have to unscrew A LOT before it comes open, but once you get the hang of it, its very simple to do. Watch the video for the proper placement of the gaskets and always test with water. 3 tries before I got it right...but now its a GORGEOUS piece to have on a counter and always gets great comments.

These are really quite nice and permeates the flavors into the whiskey they way you hope. My only disappointment was the size which is smaller than I imagined. The product is sturdy and made with quality materials.
