I bake cookies about once a week, so I've always been curious about using silicone mats on my baking sheets. Also, as a television producer and videographer for nearly 40 years, I've worked on my share of TV cooking shows, both in the studio and in commercial kitchens. And you can't do that for long without running across a few Silpat mats. Needless to say, I was eager to try these.Before I baked my first test batch, I did a quick search for how they might work vs. parchment paper, which I've been using for at least 20 years now. There were some warnings that my cookies might spread too much and crisp too much since the silicone is very slippery, and saying that I should just stick to parchment. Uh oh.I decided to do a side-by-side test ... one pan on parchment paper, and one on the silicone mat. But, to my surprise, I saw little or no difference in the spread ... maybe because my cookies are already pretty "spready" and crispy, which is what my family enjoys. As you'll see in the before and after photos, there is very little difference between the two pans, which were baked at the same time at the same temperature. (What ... you don't drink wine when you're making cookies?!?). However, I use very little flour in my recipe, so a standard chocolate chip cookie might indeed spread more. Your mileage may vary.You save time up front by not tearing and folding the parchment paper to fit your sheet pan, but then you give up time at the back end since you're now washing and drying the silicone sheet rather than throwing away the parchment. In other words, it will come down to personal choice and the time investment is about the same.I don't think I'll be using these mats for much other than cookies. When I roast a pan of vegetables and toss them in oil, I don't put anything on the pan. And if I did, the olive oil would run off the edge of the mat anyway, so what's the point.Nice generic replacement for the Silpat if that's what you're after. Perfect fit for my half-sheet pans, and they seem durable and well made.

I ordered this set of Silicone Baking Mat, Silicone Cookie Sheets for Baking, Reusable Baking Mat, 2 Pack, Non-Stick Reusable, Food Safe, 16.5" x 11.6", Dark Gray Oven Baking Sheet for Making Cookies, Macaroons, Bread (2) two silicone baking mats to replace my older mats that have been well used over the years.These baking mats are made from food grade silicone; they are BPA free, and the sales page says they are reinforced with fiberglass, which is new to me. These mats are a touch thicker than the ones I am replacing; maybe that’s the fiberglass. These mats measure about 16 1/2” x 11 1/2”; they fit my larger trays and I can use them in smaller trays, though they overlap the sides slightly.I use baking mats almost every day; they’re great for baking bread, making cookies, baking fries or roast potatoes, popping under a meatloaf pan or a pie to catch run over, etc.I love that these are reusable—I’ve cut down on my use of tinfoil and baking parchment since I started using these silicone sheets. And baked goods just slide right off the baking sheet—nothing sticks, no crumbly messes.This set of two sheets rolls up for easy storage; very useful in my small NYC kitchen. These are dishwasher safe and easy to clean if you hand wash. I tend to hand wash my silicone kitchenware to extend their longevity; I found these very easy to clean. I like knowing I can put them in the dishwasher if I’m in a rush.At the current price ($6.99 for two) this is a nice bargain; I’ve seen less sturdy baking sheets for much more.

I like this mat. The thickness is good for the intended purpose and it's flexible enough to roll up for storage in a zipper bag. I like the light color; I have an older Wilton mat that is very dark brown, and it tends to over-brown my cookie bottoms.None of my cookie pans are exactly the right dimensions for this mat to fit into, but it works fine on my rimless ones. I have a nice 12 x 16 Wilton pan that I wanted to use a mat in, and I found it easy to trim the end of one of these longer silicone mats with scissors for a perfect fit.The surface of my pans had gotten pretty shaggy after many years of baked-on residue. Rather than spend a small fortune on new pans, these silicone mats give me a clean, smooth surface every time.I had previously used parchment paper sheets, and that is still a good option in some situations. But those are so slippery that every cookie session included at least one whole sheet of cookies sliding off when a rimless pan tipped a little too far off level. The silicone mats cling to the pans. Cookies are easy to peel off, but they don't bail out prematurely.Parchment paper is easy to roll up and throw away, but the silicone mats are easy enough to maintain and reuse indefinitely. A few swipes with a soapy dishcloth and a quick rinse, and cleanup is done.Definitely recommend, except to comment that the 2-pack is a better deal than this single sheet.

I bake constantly but I’ve never tried a silicone baking mat before. I know the brand of parchment paper I favor gives me excellent results, so it was hard for me to risk ruining a batch of baked goods in order to test one out. I took the plunge with these silicone mats and was thoroughly impressed. I tested them while making some sourdough discard cheese crackers which have a very sticky dough that would’ve given parchment paper a run for its money. These mats worked like a charm, my crackers slid right off with no sticking. Given that several people who reviewed the recipe said the finished crackers stuck solidly to inexpensive parchment paper, it’s a real testament to the nonstick nature of these mats. While they don’t completely replace parchment for some applications, I think I will exclusively use these mats for things I bake on cookie sheets. Cleanup is a breeze and I’ll definitely save some $ on parchment paper. I love these mats and highly recommend them!
