If you make soups and stews, you absolutely need this in your life. The skimmer is so effective, it gives you clean, beautiful, velvety smooth broths. I was amazed. Easy to clean, too. Recommended by a food blogger, and I was skeptical at first about whether I needed it, but now I wish I had gotten this tool long ago.

This little kitchen do-dad is really handy! It obviously works great for skimming fat off of soups, and the yuck that develops on top of the liquid when you're making homemade stock. But, I also use it to drain off the runnier portion of raw egg whites prior to poaching them.Just crack your egg into a small bowl or ramekin, then slide that little sucker onto this strainer (over a bowl or sink) and allow the thin portion of the egg white to slide through. Then use the strainer to gently slide your egg into the poaching water. You will have a much prettier poached egg, and a lot less of that lacy egg white material floating around your pan.I love it!

This skimmer was so much easier to use than a strainer! It picked up the whey from a batch of clarified butter with little maneuvering effort. The only drawback is its physical makeup. It seems flimsy, we’ll see how long it lasts.

The mesh on this tool is incredibly fine and that's what causes fat to get trapped but thin liquids to pass through. Great for skimming the surface fat off a soup or stew.

My broth just became worlds better. I have a small strainer that I have used for years but when the scum floats to the top of beef, chicken, or ham broth sometimes what u are trying to strain is extremely fine. I was reading an article about Asian broths and it talked about ultra fine strainers so I bought these. The mesh is so fine there is hardly a perceivable hole. The strainer aside from catching the scum also can glean the broth of ground pepper, spices - anything.Overall, I wish the strainer was sturdier but don’t take that statement as a reason to go to another one - from what I saw they are all pretty well made the same and it’s not that it is built poorly I just wish it was made with heavier materials. The last thing I wish is that it had a little more depth like a typical strainer when you are trying to strain deeper into the pot you have to travel slowly or else it’s almost like passing a spoon through the liquid. - everything just goes to the sides.

I've seen 'em and never used one. Saw that hot Thai chef using one on YouTube and ordered it. She always knows what she's doing. Works better than I ever imagined if you do it right. Will try not to regret all the time I've wasted with less effective methods

LOVE this strainer!!!! Well made, and works perfectly for a multitude of frying/boiling/sautéing/etc. cooking applications with my Staub Dutch oven and fry pans. Every kitchen needs one!
