The broad surface and very fine perforations allow water to pass through, while even relatively small accumulations of scum (the kind you get when boiling, say, lamb or beef) are retained. It's a distinct step above using a conventional woven-wire strainer. Not all cooking operations require the skimming of scum, but where you want it, you want it done well.

I was anxiously awaiting arrival of this fat skimmer spoon because I love to cook and intended to use it for chicken soup. I settled on this one after spending an hour reading many dozens of reviews. It was a big disappointment and does not function as intended or described.It is not an exaggeration to say that the holes in the "bowl" of the spoon are practically microscopic in size; therefore, it does not drain. I tested it by gently filling the bowl of the spoon with cold water (I didn't remove the hang tag), and other than a tiny dribble that drained through, the remaining water just pooled inside the spoon.Another complaint is that the handle is much too short -- less than eight inches. I will be returning it because if it does not drain, it is useless for the purpose intended.
