What Is Blind Baking?

  • You may want to blind bake a pie crust when the filling cooks more quickly than the crust, meaning if you cooked them together, either the crust would turn out underdone or the filling overdone.
  • And then there are certain pies, like cream pies, custard pies, or chiffon pies that aren't baked, so the crust needs to be baked by itself, then cooled filled.
  • Additionally, when you're making a fruit pie, the filling can leak juices that soak into the uncooked pie dough and cause the finished pie to have a soggy bottom crust. Blind baking a pie crust will help prevent this common baking problem. But you can't simply line a pie pan with crust and bake it. If you did that, the crust would bubble, blister, and puff up or shrink, making it impossible to use.
  • The key to blind baking is you need to weigh the crust down with something to hold it flat.
  • That's where pie weights come in.

Making Your Own Pie Crust

  • Pie weights are a standard baking tool used when pre-baking a pie or tart shell. This process is also called blind baking.
  • Pie weights prevent the crust from forming air pockets that bubble up or shrinking as it cooks. They weigh down the dough to hold its shape and stays firmly nestled against the pie plate.
  • Pie weights are small ceramic or metal balls that you use when “blind” baking a pie crust.

Tips:

  • Chilling or freezing your crust before blind baking can also help to prevent puffing. It also reduces the likelihood that your foil or parchment paper will stick, or that you will damage any fancy fluting.
  • Pricking your crust with a fork can be a good safety measure even when using pie weights. Just don’t do this with very wet fillings.
  • Always remember to have a layer of foil or parchment paper between your crust and the weights. This stops them from sticking, makes removal more accessible, and prevents flavors or aromas from transferring to the crust.
  • If you find that the bottom of your blind-baked crust comes out a little soggy when using aluminum foil, try parchment paper instead.
  • Ensure that your pie weights are evenly distributed over the crust surface and pushed out to the sides. Keeping the matters in an oven bag can make removal of them more accessible.
  • Commercial pie weights can be quite heavy, so adjust the number of matters you use accordingly. You may need two layers of dried beans.
  • Some recipes call for a crisp, golden crust. Remove your weights and foil or paper halfway through blind baking to allow the crust to bake thoroughly and develop some color.
  • If you find that your crust sides are burning or baking faster than the bottom, make sure to fully cover the sides with foil or purchase a silicone pie crust shield.

I've used the pie weights 3x now. I like that they're small and fit into the pie shell better than the larger pie weights. There's enough for a 9 inch pie. The quality and weight are good and my bottom and side crust didn't shrink when using them. The container is a nice bonus. Well worth the money.

I've never used these before, but my recipe for quiche said I should blind bake using pie weights. The crust came out great using these, nice and crisp, not soggy. Good price, good product, works well.

Just learned about blind baking and making my own crust! This is definitely a must. Ease use. Works well. Little tip, I place parchment paper before using the beans, then when done I pick up the parchment paper with the beans and place them back in the container the beans come in. To avoid burning my counters or myself. The 1.32lb set is perfectly enough for a 9×9 pie crust or deep dish too. For those who don't understand 9×9, your average pie pan!

The crust liners keep these from sticking to the crust and help to lift them out of the pan after baking the crust. My crust turn out good, but I am forever spilling these little ball weights all over the place.
